Summary: 

The Sushi Cook is responsible for preparing sushi and other various food products, ensuring the quality and presentation of food products prepared, performing all station functions necessary in the prep and cooking areas, providing the highest quality of service to customers and associates at all times, and performing all other responsibilities as directed by the business or as assigned by management.  

 

This is a non-exempt position and typically reports to the Sushi Chef depending upon local requirements. 

 

Essential Functions: 

  • Follows recipes and/or product directions for proper food preparation and presentation 

  • Follows menus, estimates food requirements, checks production and keeps records in order to accurately plan production requirements and requisition supplies and equipment as needed 

  • Practices excellent food safety and sanitation practices and complies with HACCP standards 

  • Transfers supplies and equipment between storage and work areas by hand or cart 

  • Prepares appropriate equipment for cooking 

  • Operates kitchen utensils and/or equipment used for heating, weighing, measuring, mixing, washing, peeling, cutting, grinding, stirring, straining, slicing, assembling and kneading of food products 

  • Ensures proper food handling procedures are followed for wrapping, labeling, dating, stocking, storing, rotating and checking temperature of products 

  • Receives and inventories food and beverage product and supplies 

  • Cleans and sanitizes workstation and equipment 

  • Stocks, dates, rotates and checks temperature of product 

 

Minimum Qualifications, Knowledge, Skills, and Work Environment: 

  • Requires a high school diploma or equivalent GED 

  • Requires a minimum of 1 year of closely related Sushi cooking experience with food preparation skills and knowledge of HACCP standards; requires food knowledge of Sushi 

  • Must be able to pass company provided food & safety sanitation class 

  • Requires work experience in a high volume and casual dining restaurant environment 

  • Requires the ability to bend, twist, and stand to perform normal job functions 

  • Requires the ability to lift and/or move up to 40 pounds 

  • Requires the ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably with customers 

  • Ability to speak and write Japanese a plus 

  • Frequently works with sharp knives and utensils 

  • Frequently immerses hands in water and water diluted with chemical solutions
